Don’t say I don’t help you stay healthy. Yummy and scrumptious but healthy all the same. Yallah, let’s go!
Now you may wonder how I came about this recipe? Well, I love pancakes, and I love experimenting with food. So although I’ve used this exact ingredients (minus apple sauce) to make traditional pancakes in a frying pan, I wanted to see how it would turn out if I didn’t use any oil, hence baking it in the oven. And to my delight it came out very nicely!
What you’ll need:
Whole meal flour
2 eggs
1 very ripe banana
apple sauce
soya milk
spinach
Preparation
Heat your oven to 200 degrees for about 12 minutes.
Then in a blender, pour in the soya milk and spinach and blend till spinach is smooth. Afterwards, combine all the ingredients. The consistency of the mixture should be neither thick nor watery.
Place mixture in an oven tin and bake for about 20 minutes, or until a tooth pick comes out dry.
When done, take the tin out and leave to cool for some minutes and serve.
It’s delicious on it own, but if you have a sweet tooth like me, spreading on maple syrup is hmmm amazing! 😀
